Revealed: the reason why plane food has a bad reputation

PLANE food is one of people's favourite things to complain about - but it may be us, not the quality, which is the problem.

Experts say they know the reason why meals are nearly always bland, unappetising affairs - and it is down to our overly keen senses.

According to research, eating is a multi-sensory experience, so exposure to the constant loud noise experienced on a flight can reduce passengers' enjoyment of food on board.

US psychologists studied the influence of noise during a flight on the five basic tastes - sweet, salty, bitter, sour and umami (a "pleasant, savoury taste").

A total of 48 participants rated them on a scale from "barely detectable" to "strongest imaginable" - while they were tested against different noise levels ranging from a normal room to 85 decibels.

Noise level had no influence on intensity ratings for salty, bitter, and sour tastes - but taste was suppressed for sweet and enhanced for umami in air cabin noise conditions.

Study co-author Kimberly Yan, of New York's Cornell University, said: "These results suggest that enjoyment of airline food may be rated consistently lower than would be expected.

"The loud ambient noise dampens perception of pleasurable sweet flavours.

"However, the results also suggest that this could be ameliorated by focusing on the sought-after taste quality of umami, which was not just immune to the effects of loud noise, but enhanced by it."

為何飛機餐特別難吃?國外研究找出原因

常聽到有人抱怨飛機餐難吃,在飛機上吃飯,好像就是比平常的食物難吃一些,不過國外研究指出,我們錯怪飛機餐了,不是那些菜色真的特別糟,而是機艙內的噪音影響味覺,因此覺得索然無味。

英國《太陽報》昨報導,引述美國康乃爾大學學者金伯利顏(Kimberly Yan)和丹朵(Robert Dando)進行一項實驗,找了48位自願者,在三種不同的音量下試吃食物,並依照食物的酸、甜、苦、鹹進行評分,結果發現,噪音會干擾人類的味覺,在超過85分貝下的噪音之飯,會覺得甜味變少,而甜味會讓人產生愉悅的感覺。

實驗也發現人類在噪音下對「甘味」比較敏銳,「甘味」是來自日本人的說法,就是因食物中的胺基酸或谷氨酸鹽而產生的回甘感,噪音下味蕾對番茄汁的「甘味」特別敏感。德國漢莎航空也有類似說法,漢莎航空發現,機上的旅客喝的番茄汁數量不下於啤酒,去年進行小規模研究後發現,機艙內的氣壓會使人覺得番茄汁變得好喝。

康乃爾學者的研究今年3月已發表在國際醫學期刊,他們表示,食物是否美味是桌重感官體驗的結合,機艙噪音影響下,會覺得飛機餐特別難吃。這項發現有助於各大航空公司未來研發飛機餐的菜色。


以後飛機場弄得難吃也能有藉口了(喂)
不過味覺的確很微妙,即使是同樣的食物,在不同的地方、身邊有人相伴與否也會有很大的影響
